Sweet smooth white chocolate blends with the spice of cardamom and earthy pumpkin flavors in this soft old fashioned pumpkin cookie. Adding the white chocolate and cardamom dresses up the simple fall crop.
Pumpkin cookies with white chocolate chips and cardamom
Ingredients
- 1/4 cup butter room temperature
- 1/2 cup sugar
- 1 whole egg beaten
- 1/2 cup pumpkin puree
- 1 cup all purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cardamom
- 1/4 tsp nutmeg
- 1 tsp vanilla extract
Instructions
- Using a mixer, cream butter until creamy. Slowly add in the sugar. Cream until light and fluffy. Add the egg, vanilla and the pumpkin; mix well. Add in the flour, baking powder, salt and cardamom. Stir until combined. Add the white choclate chips. Drop by teaspoon fulls onto a greased cookie sheet. Bake in a 350 degree oven for 10-12 minutes.
