Pumpkin cookies with white chocolate chips and cardamom

Ingredients
  

  • 1/4 cup butter room temperature
  • 1/2 cup sugar
  • 1 whole egg beaten
  • 1/2 cup pumpkin puree
  • 1 cup all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cardamom
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract

Method
 

  1. Using a mixer, cream butter until creamy. Slowly add in the sugar. Cream until light and fluffy. Add the egg, vanilla and the pumpkin; mix well. Add in the flour, baking powder, salt and cardamom. Stir until combined. Add the white choclate chips. Drop by teaspoon fulls onto a greased cookie sheet. Bake in a 350 degree oven for 10-12 minutes.
