Nothing yells vintage like a good ol fashioned carrot cake recipe or carrot muffins recipe. A blend of spices, mixed in with a soft moist cake, what is better? Vintage recipes are passed down from generation to generation. No reiventing the wheel, just following your families traditions one year to the next.

best tips for making muffins

  • Baking your muffins at a high temp for a few minutes at the beginning of baking jump starts and activates the leavening agents in the batter.
  • Let your batter come to room temperture before baking. This allows the ingredients to meld together allowing for more even baking.
  • Spray your liners with a non stick spray. Sometimes the they can be a bit stubborn to remove.
  • Remove your baked muffins from the tin right away. If left in the tin they will continue to bake and may become overdone.
  • Let your muffins cool completely before removing the liner.
