Finnish kermakakku

A velvet textured bundt cake made with heavy cream.

Ingredients
  

  • 1/2 cup butter room temperature
  • 1 cup granulated sugar
  • 3 lg eggs
  • 1 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cardamom
  • 1 tsp vanilla extract
  • 3/4 cup heavy cream

Method
 

  1. Grease bundt pan and set aside. Set oven to 350 degrees. Add butter and sugar into your mixer bowl. Mix on medium speed until light and fluffy. Add in 1 egg at a time, beating well between each egg. Add vanilla. Mix. Set aside. Add the heavy cream to a spereate bowl and mix on high until fluffy. In another bowl sift or whisk the flour, baking soda and cardamom. Add half of this to the creamed butter mixture and mix on low speed until combined. Add remining dry ingredients and mix well. Fold in the whipped heavy cream until blended in the batter. Pour into prepared pan. Bake for 45 mins. Check with a toothpick. It should come out clean. Add and extra 5-10 minuites if needed. Cool for 10 minutes. Turn onto wire cooling rack. Let cool. Enjoy
