Finnish Blueberry Pie

Ingredients
  

  • 1/4 cup heavy cream half and half or milk can be used
  • 3/4 cup warm water
  • 1 tbsp yeast
  • 1 tsp salt
  • 1 tsp ground cardamom
  • 2 tbsp granulated sugar
  • 2 1/4 cups all purpose flour
  • 1/2 cup melted butter
  • 1 lg egg for brushing

filling

  • 4 cups blueberries If using frozen, thaw and drain
  • 1/4 cup granulated sugar

Vanilla glaze

  • 1 cup powdered sugar
  • 1/4 cup soft butter
  • 4-5 tbsp half and half milk will also work
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 350 degrees.
    Add cream and water to a microwavable bowl. Heat for 45 seconds. Add heated liquid into a large mixing bowl. Add yeast and mix to dissolve. Add in, salt, sugar, flour and cardamom. Mix well. Cover and let rise until doubled. Approx 25-30 minutes.
    Grease a 10x15 inch pan or line with parchment paper. Spread dough onto the pan or paper. The dough will be sticky.
    In a medium sized bowl, mix the blueberries with the sugar. Spread out evenly onto the dough. Fold the edges of the dough over the berries about 2 inches on each side. Brush the edges of the dough with the beaten egg.
    Bake for 30 minutes.
    While the pie is baking. Mix together, powdered sugar, milk, butter and vanilla. Add more liquid if needed to get the consistancy of a glaze.
    Remove from oven and let cool. Drizzle the vanilla glaze over the pie! Serve with a nice cuppa!! This is also fantastic served with ice cream.
