Nothing yells vintage like a good ol fashioned carrot cake recipe or carrot muffins recipe. A blend of spices, mixed in with a soft moist cake, what is better? Vintage recipes are passed down from generation to generation. No reiventing the wheel, just following your families traditions one year to the next.

Carrot Cake Muffins
Ingredients
- 1 cup olive oil
- 2 cups sugar
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp salt
- 4 cup grated carrots
- 1 tsp vanilla
- 2 cups all purpose flour
Instructions
- Using a mixer, beat eggs until light and fluffy. Add oil and sugar. Mix well. Gradually add dry ingredients, (flour, cinnamon, nutmeg, baking soda, baking powder and salt) mix until combined. Stir in carrots and vanilla. Let batter sit at room temperature for 30 minutes.
Muffins
- Line 2 muffin pans with muffin liners. Fil the liners 3/4 of the way fill.Bake at 400 degrees for 5 minutes. Turn down oven after 5 minutes to 325. Bake for 15 more minutes. Poke with a tooth pick. When it comes out clean. The muffins are done.Remove from the muffin tin and cool all the way.Frost with buttercream frosting.
Cake
- Grease a 9x13in pan or a bundt pan. Pour in the batter. Bake at 350 for 45-50 minutes. Check for doneness with a tooth pick or a skewer.
Cream Cheese Frosting
- 1/2 butter softned1 8oz package cream cheese ( room temperature)3.5 cups powdered sugarBeat together the frosting and the cream cheese. Mix until the mixture is smooth. Slowly add the powdered sugar, mix on low until the powdered sugar is incorporated. Beat for 2 minutes on medium speed. Spread on cooled cake or muffins.
best tips for making muffins
- Baking your muffins at a high temp for a few minutes at the beginning of baking jump starts and activates the leavening agents in the batter.
- Let your batter come to room temperture before baking. This allows the ingredients to meld together allowing for more even baking.
- Spray your liners with a non stick spray. Sometimes the they can be a bit stubborn to remove.
- Remove your baked muffins from the tin right away. If left in the tin they will continue to bake and may become overdone.
- Let your muffins cool completely before removing the liner.
