Pumpkin bars with maple cream cheese frosting
Ingredients
- 4 large eggs
- 2 cups sugar
- 1 can pumpkin puree
- 1/2 cup oil canola or vegetable
- 2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 `tsp maple flavoring
Maple Cream Cheese Frosting
- 8 oz Cream cheese room temperature
- 1/4 cup butter softened
- 1 tsp maple flavoring
- 4 cups powdered sugar
Instructions
- Grease a 10 x 15 inch baking pan. Set aside. Pre heat oven to 350 degrees
- In a large mixing bowl add the eggs and sugar and beat until light and fluffy. Mix in the pumpkin puree and the maple flavoring. Mix until well incorporated. Add the oil and combine. Add the flour, baking powder, baking soda, salt and the pumpkin spice. Mix on medium until smooth.Pour the batter into the prepared pan. Spread the batter out evenly. Bang the pan on the counter to settle the batter. Bake in the 350 degree oven for 25-30 minutes.Check for doneness with a toothpick or fork.
Maple Cream Cheese Frosting
- Add the room temperature cream cheese and the softened butter into a mixing bowl. Beat until smooth. Add the maple flavoring and mix well. With the mixer on med low speed, slowly add the powdered sugar 1 cup at a time, mixing well after each cup. Spread the frosting over the cooled pumpkin bars. Store bars in the fridge or freeze for up to 6 months in a freezer proof container.
