- 1. In a large mixing bowl add the butter and the sugars. Beat on medium speed until smooth and creamy. Add the baking powder, baking soda, salt and cinnamon. Mix until fully combined. Beat in the eggs and vanilla until combined. Remove from mixer and add the flour. Mix with a large spoon by hand till the flour is totally incorporated. Add the oatmeal and butterscotch chips and mix until combined.2. Drop cookie dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. 3. Bake in a 375 degree oven for 10 minutes. Remove from oven and let set on the pan for an additional 10 before removing to a cooling rack. Cool and enjoy.Store in a air tight container on the counter for 1 week. Or in a freezer friendly container for up to 3 months.
